Puff pastry with apples

Today we are going to prepare a puff pastry with apples o caramelized apple pie, that we will try to make it look like the famous tarte tatin. For those who do not know their history, at the end of the 19th century, the Tatin sisters had a hotel in front of the Lamotte-Beuvron station in France. One day it is not known if they burned the base or forgot to put it on, but to save the apples they put the dough on top. Over time it became one of the favorite desserts in France and its fame does not seem to want to stop. For the authentic one you need a special frying pan, we will make a very simple but no less delicious version.

Preparation time: 40 minutes.
Ingredients
  • 6 to 8 apples
  • 150 g sugar
  • 100 grams of butter
  • 1 purchased puff pastry.
Preparation

We peel the apples and cut them into quarters.
In a mold of 24 cm, rather deep we place the butter in pieces.
And then in a saucepan we put the sugar with about 8 tablespoons of water and we put the fire until caramel point. I like it to be dark, but you have to be careful that it doesn't burn, as it would give the apples a bitter taste.
We pour the caramel over the butter and quickly arrange the apples on their sides by dipping them into the caramel.
We put an aluminum foil on top and we take them to the oven for about 10 minutes. (180º to 200º)
After this time we remove from the oven, remove the aluminum foil, and cover the apples in caramel with the dough. We try to place the edges of the puff pastry well into the preparation.
We return the cake to the oven at the same temperature, until the puff pastry is cooked and the caramel comes out from the edges upwards.
We remove from the oven and turn on the plate that we will use to present it, always being very careful not to burn ourselves with the caramel. If despite the precautions you get burned, quickly put the affected area under cold water. I clarify this point, because if there is a risk of burns, I will surely burn.
The real tarte tatin is eaten alone, but since this is an imitation you can accompany it with ice cream, creme anglaise or whipped cream. Variations can also be made with other fruits and even salty. On another occasion we will try to prepare one of onions.
It can be eaten warm or cold.
