Ingredients
  • 2 potatoes
  • 2 naranjas
  • Smoked salmon
  • 2 eggs
  • Some black olives
  • Extra virgin olive oil

Preparation
  1. We put the eggs to cook in a pot with plenty of water and cook for 10 minutes counting from when the water starts to boil. Then, we refresh them under cold running water and set aside.
  2. Meanwhile, we peel and cut the potatoes sliced, with a thickness of approximately one centimeter. We place them spread out on a plate, cover them with plastic wrap and cook them in the microwave at maximum power for 3,5-4 minutes. Once tender, we uncover and reserve.
  3. Then we peel the oranges and we separate its segments cutting these in half lengthwise.
  4. We assemble the salad placing the potatoes as a base and adding the orange and salmon in pieces on top of them.
  5. Then we add the boiled egg and black olives.
  6. We water with a drizzle of oil to complete.
  7. We serve the potato and orange salad with salmon and black olives.
