Pasta salad with cherries and fresh cheese

The heat has transformed our table. Salads and, in general, lighter dishes now take on more prominence on the weekly menu than those we prepared months ago. Salads are a more summery way of presenting pasta; yesterday we were preparing this at home pasta salad with cherrys and fresh cheese.

Simple and quick to prepare, so are cold pasta salads. During the time the pasta is cooked, we can take advantage of preparing the rest of the ingredients: cherrys, fresh cheese, tuna and olives. It is an ideal salad to take to the beach in a tupper and it is fantastic with a little mayonnaise.

The pasta salad with cherrys and fresh cheese is served very cold and is therefore ideal to complete our menu at this time of year.

Ingredients
  • 150 g. macaroni
  • 16 cherry tomatoes
  • 2 cans of tuna in olive oil
  • ½ fresh cheese
  • Olives
  • 3 tablespoons mayonnaise
  • 1 teaspoon sherry vinegar

Preparation
  1. We cook the pasta in a pot with plenty of salted water, following the manufacturer's instructions.
  2. Meanwhile, in a salad bowl Put the cherry tomatoes halved, the drained tuna, the diced fresh cheese and the olives, part whole, part chopped.
  3. When the pasta is done the we cool under the tap with cold water and drain it. Once drained we add it to the salad bowl.
  4. Finally, we pour a splash of sherry vinegar and the Mayo. We stir and put in the fridge until serving time.
