Cod salad with orange

This week I propose a cod salad with orange, a fresh dish that provides aroma, flavor and color, un very complete starter that we can prepare during these days of Easter.

Fruit salads give a lot of flavor We can take them cold or warm, we can also make other combinations and use the fruits that we like the most. It is a very complete dish and a good way to eat fruit.

Ingredients
  • 250 gr. desalted cod
  • Assorted lettuces (endive, lettuce ...)
  • 3 naranjas
  • 1 can of asparagus
  • Pitted black olives
  • A handful of peeled and chopped walnuts
  • Pepper
  • Oil Salt

Preparation
  1. We prepare all the ingredients:
  2. If we buy the salted cod, we will keep it in water for 48 hours in the fridge and we will change it every 6-7 hours of water, until it is desalted.
  3. We peel and cut 2 oranges into finite segments. On the other hand, we wash and drain the lettuces well, cut them into small pieces.
  4. We cut the cod into thin slices.
  5. Now we prepare the salad, we can prepare it in a source or individual.
  6. We take a source and put the lettuces well cleaned and drained on the base, we put the orange segments around the lettuce, the pieces of cod that we can cut into strips or small pieces, we put the black olives without bone, we chop the nuts and We toss them on top, open the can of asparagus and put them around the salad.
  7. We prepare the dressing, squeeze the remaining orange, take a part of the juice and mix it with a good jet of mild olive oil, a little pepper and salt, stir it, try it and leave it to our liking, we dress the salad with it .
  8. And ready !!! A fresh and light salad.
