The zucchini harvest is being generous and at home we have looked for new ways to integrate it into our diet. This week we have prepared zoodles or zucchini noodles with bacon, tomato and cheese. A very healthy and quick dish to prepare, which I am sure we will repeat.
To create the zucchini noodles we have used a spiral or spiralizer vegetable cutter. Don't worry if you don't have one, you can use a mandolin to cut it very thinly or a very sharp knife to cut it into sticks. The important thing here is the quality of the ingredients and its combination so tasty!
- 6 slices of bacon
- 1 tablespoon olive oil
- 1 large zucchini
- ½ teaspoon minced garlic
- 1 cup cherry tomatoes
- ⅓ cup ricotta cheese
- Sal Island
- Black pepper
- We fry the bacon in a skillet until crisp.
- We cut the zucchini spiral and open the cherry tomatoes in half.
- We heat a tablespoon of oil in a frying pan and sauté the garlic a few seconds until it acquires color.
- Then, add the zucchini and sauté approximately 5 minutes. We want it to be al dente.
- We incorporate the tomatoes, the chopped bacon and the cheese. We stir until the cheese melts and everything is well mixed.
- We season to taste and serve immediately.
