There are many ways to prepare mussels and until last weekend I had not tried this one. The mussels in tomato and vegetable broth that we prepare today have some similarities with the mussels in American sauce that we all know. Do you dare to try this new recipe?

Ingredients
  • 2 tablespoons olive oil
  • 1 small onion, finely diced
  • 2 dientes de ajo chopped
  • A pinch of salt
  • 1 small carrot, diced
  • 1 can of whole peeled tomatoes
  • 2-3 stalks of chard, finely chopped
  • 1 bunch of parsley
  • A bunch bunch of coriander |
  • 1Kg. clean mussels

Preparation
  1. In a large saucepan we heat the olive oil. When it is hot, add the onion, garlic, carrots and a pinch of salt and cook until onion becomes soft, 3-5 minutes, stirring occasionally.
  2. Next, we add the tomatoes and all their juice, plus a measure (can) of water. We bring to a boil and cook until the tomatoes start to fall apart, 5-8 minutes.
  3. We incorporate the leaves and the aromatic herbs and cook 3-4 more minutes.
  4. Finally, add the mussels, cover the casserole and cook until all the mussels open, 1 to 2 minutes.
