Ingredients
  • 400 gr. cooked pumpkin
  • 3 eggs
  • 300 ml. evaporated milk (can be substituted for normal milk)
  • 3 tablespoons of sugar
  • 2 tablespoons of corn flour (Maizena)
  • 1 tablespoon of liquid vanilla
  • Liquid candy

Preparation
  1. To prepare the pumpkin, you can cook it in the microwave, put it in a bowl cut into pieces without the microwave-safe crust and cover it with plastic wrap, put it in the microwave for about 10-12 minutes at 800 gr. We let temper
  2. In a bowl we put the eggs with the three tablespoons of sugar, the milk, the cornmeal and the vanilla, we beat everything with the mixer.
  3. Add the pumpkin and beat until you get a liquid and well mixed cream.
  4. In a mold suitable for the microwave we put the liquid caramel, add the prepared cream on it and put it in the microwave, we put it at 600W for about 10 minutes, we let it rest for 3 minutes without opening the microwave and we put it another 10 more minutes , we let it rest for another 3 minutes without opening the microwave door.
  5. We check with a toothpick by clicking in the center of the flan, if it comes out dry it will be ready if you see that it lacks a little, put it a couple of minutes more.
  6. We take it out and leave it in the fridge until it's time to eat it, we serve it on a plate and cover with a little more caramel and that's it.
  7. It only remains to accompany it with what you like the most, like a little cream that goes very well.
