- We will put a saucepan with the milk to cook, add the cinnamon stick, add the lemon peel trying to take only the yellow part, the bitter white.
- Add the tablespoons of sugar, you can add more or less sugar, depending on how sweet you like it.
- We will stir until all the sugar dissolves, when it starts to boil, remove it from the heat and let it rest and warm for about 15-20 minutes.
- We strain the milk to remove the lemon peel and the cinnamon stick, we will put it in a container and put it in the fridge.
- When it is totally cold, we will put it in a container to put it in the freezer, we will leave it for a couple of hours, we take it out and crush it with the blender, since it will have begun to crystallize, we put it back in the freezer and after 2 hours we return to repeat it.
- We will leave it in the freezer and a little before serving we take it out for about 30 minutes and leave it in the fridge.
