MELON IN SYRUP

INGREDIENTS:
- 1 large melon
- 1 sprig of fresh mint
- 4 tablespoons of honey
- 1 lemon

PREPARATION:
- Wash the whole melon well
- Remove the pulp (leaving a little on the skin) and cut it into small cubes. Put in a bowl or salad bowl and reserve in the fridge.
- Put the peel in a saucepan together with the seeds and the juice that has been released, the honey and the chopped mint leaves. Add 1 glass of water, simmer for about 15 minutes, stirring from time to time.
- Let cool. Strain the syrup. Add the lemon juice. Pour into the melon cubes and marinate in the fridge for at least 30 minutes.
- Serve in individual bowls and sprinkle with chopped mint leaves.

      It can be canned but I can't tell you how long it can last in good condition or if you would have to add a preservative to make it last longer. I'm sorry I couldn't be of more help 😉
