Ingredients
  • 250 ml. whipping cream (35% fat)
  • 500g of mango cerne
  • 160 g. icing sugar
  • 120 ml of water
  • 2 teaspoons of neutral gelatin powder
  • 8 tablespoons of granola
  • 1 diced mango

Preparation
  1. In a bowl we whip the cream chill well until firm and once done reserve in the fridge.
  2. Then, mix the gelatin powder and water in a glass and let the powder hydrate for five minutes.
  3. We take advantage of this time to crush the mango meat with the icing sugar until we achieve a puree.
  4. We return to the gelatin to take it to the microwave in heat shocks of 15 seconds after which we will stir the mixture until we see it completely dissolved.
  5. Once dissolved, add two tablespoons of the mango puree to the gelatin and mix well.
  6. Then we pour this gelatin mixture on the mango puree remaining and mix until incorporated.
  7. In conclusion, we integrate with enveloping movements this mixture into the whipped cream.
  8. Divide the mixture into 6 glasses and take to the fridge until set, about 4 hours.
  9. Before serving, add the granola and fresh diced mango and enjoy the mango mousse very cold.
