Light cheesecake

Today it's light cheesecake, if it doesn't have sugar as it sounds light, it has sweetener to make it lighter. Cheesecakes They are my downfall, I like them all, I try to try all the cheesecake recipes I see. There are countless recipes for cakes and they are all delicious.

I have made this cake with sweetener for a long time and the rest of the ingredients I put light, but if you have no problems you can change the sweetener for sugar, milk. You change the cream and cheese for the normal one, it will be even better.

Ingredients
  • 350 gr. light spread cheese
  • 60 gr. corn flour (Maizena)
  • 4 eggs + 2 whites
  • 200 ml. skim milk
  • 375 evaporated milk or liquid cream
  • 3 tablespoons liquid sweetener
  • Lemon zest (optional)

Preparation
  1. First we will put the oven to heat to 180ºC
  2. We take a bowl, in which we will put all the ingredients, first the liquids together with the cheese and the sweetener and finally the cornmeal.
  3. With the mixer we blend it all together until it is a thin, liquid cream.
  4. We prepare a mold, spread with a little butter and put all the cream.
  5. We put it in the oven at 180º C, let it cook until we see that it browns on the top, then we prick it with a toothpick in the center, if it comes out dry it will be ready if not we will leave it a little longer. If it is browned a lot on top we will put a piece of silver paper and cover it. We let it be done.
  6. When it is, we take it out and let it cool. It is better if we let it rest for a few hours.
  7. And ready to eat !!!
