Lentils with vegetables and potatoes

We are going to prepare some lentils with vegetables and paratas, a healthy dish, low in fat and very good. A very simple lentil dish to prepare.

A complete dish that can be added to the vegetables that we like the most, I added some potatoes in small pieces, they can be removed. You can also add some spices to give it more flavor.

We can take advantage and make more quantity and freeze.

Ingredients
  • 400 gr. lentils
  • 2 potatoes
  • 1 piece of red pepper
  • 1 green pepper
  • 2-3 artichokes
  • Carrots 2
  • 1 cebolla
  • 1 jet of oil
  • 1 teaspoon of paprika
  • ½ teaspoon ground cumin
  • Sal Island

Preparation
  1. Peel and chop the vegetables into small pieces except for the artichokes.
  2. We put a casserole with a jet of oil, add the vegetables and sauté them for a few minutes.
  3. We wash the lentils, add them together with the vegetables, add the sweet paprika, stir everything and then add the water until they are covered and a little more water.
  4. We let them cook. We clean the artichokes, remove the hard leaves and leave the most tender part, put them in a bowl with water and lemon, add the artichokes in the water until we incorporate them into the lentils.
  5. Peel the potatoes, wash and cut the potatoes, when the lentils have taken 30 minutes, add the potatoes, the artichokes, the ½ teaspoon of ground cumin and a little salt. If necessary, we will add water to the casserole of the lentils.
  6. We let cook until the potatoes and artichokes are ready and the lentils too.
  7. We taste salt, rectify if necessary.
  8. If the lentils are very clear, you can mash some potatoes with vegetables and lentils, we add it again to the casserole. Let it cook for a couple of minutes and serve.
