Frozen lemon cup with caramel base and peanut topping

A bit long title, I know, but don't be fooled by that because doing it is very easy and it has been completely a triumph. I tried to make it one night like dessert for after dinner and we liked it so much that I immediately had to repeat and do it again, I broke a glass with so much blow of the spoon and that can only happen for two things: Or the dessert It was very good or the glass was too cheap. According to the diners, it comes first.

Difficulty level: Easy

Preparation time: 5 minutes

Ingredients:

  • Ice cream (in this case lemon, but you can make it with ice cream of any flavor)
  • Liquid candy
  • Peeled peanuts

Preparation:

It is as easy as adding all the ingredients to the glass in the following order: First the caramel, which in my case I already had it made but otherwise it is done simply by heating water and sugar (1 tablespoon of water for every 25 gr. Of sugar) until caramelized.With care it burns !. After adding the liquid caramel we will add the ice cream and, finally, the small chopped peanuts.And we can now enjoy our frozen glass !.

When serving:

To make your presentation even more successful I always wait for the ice cream to melt a little, not too much. Then I mount the glass as I have explained and, before adding the peanuts, I add a spoonful of liquid caramel on top of the ice cream. Being a little melted, the weight of the caramel itself causes it to sink in and that way the threads that are seen in the image remain. Then I put the peanuts and put the glass in the freezer so that the ice cream has the right consistency again.

Recipe suggestions:

  • You can use the ice cream of the flavor that you like the most.
  • Instead of caramel you can use liquid chocolate or some syrup, like strawberry, for example.
  • In my case I use peanuts but you could also add another topping such as almonds, walnuts, chocolate balls, colored sticks ...
  • If you don't have glasses there is no problem, it can be served the same in a glass or in a bowl. The first time I did it I served it in ordinary glasses and it was equally successful.

The best:

It is very simple, but it has guaranteed success and leaves no one indifferent among guests.
