Today I bring you the recipe for one of my favorite foods: Peas with poached egg. It is rich, healthy and very appetizing on these halftime days. I love peas in all kinds of dishes and I have found out some of their properties:

  • It provides a large amount of soluble fibers that helps us in the proper functioning of our digestive system.
  • It collaborates in a better absorption of food by controlling cholesterol and avoiding a slight absorption of sugars.
  • They are rich in minerals such as magnesium or potassium, which will take care of the proper functioning of our nervous system, as well as calcium that will take care of our bones and teeth.
  • They are indicated for weight loss diets, since they are a legume low in calories

Ingredients
  • 1 kg of peas
  • 4 eggs
  • 150 grams of ham in cubes
  • 5 cloves of garlic
  • ½ onion
  • 1 green pepper
  • Piece of bread
  • Black pepper
  • Paprika
  • Olive oil
  • Salt (a pinch)
  • Liter and a half of water

Preparation
  1. We take a pot and pour a jet of olive oil into it and when it is very hot we add the piece of bread. We let it fry a little and put it aside in a bowl to mash it together with two cloves of garlic (we put it aside until later).
  2. In the same pot and with the same oil, we fry three garlic pieces, the half onion in thin slices, the green pepper cut into two or three pieces and the ham blocks. When everything is more or less fried, we toss the peas, a teaspoon of sweet paprika, a touch of black pepper (to taste) and a pinch of salt. We also add the bread and the rest of the garlic mashed that we had separate and removed everything. When everything has mixed well and flavors together we pour the water.
  3. We let cook for half an hour over medium heat.
  4. When there are 5 minutes to turn off the fire, We add the 4 eggs to the pot and we let them get poached.
  5. And ready to eat!
