I admit that although pasta has a place in my weekly menu almost every week, it is not one of my favorite dishes. It wins whole, that is when I serve it with a significant amount of cheese and gratin. As in this recipe gratin macaroni with cod and cheese.

This recipe is so simple and yet packed with flavor. I have not been in a hurry to poach the sofrito, so the onion has acquired a slightly toasted color. And I added the cod at the last minute so that it doesn't dry out too much. Then, when you take it to the oven, cheese and breadcrumbs they have done their job, drawing a delicious crust on top. Ingredients
  • 4 handfuls of macaroni
  • ½ white onion
  • ½ red onion
  • 1 green Italian pepper
  • 300 g. desalted cod flaked
  • 1 small glass of tomato sauce + extra to spread the bottom of the dish
  • Extra virgin olive oil
  • Salt and pepper
  • 1 tablespoon of breadcrumbs
  • 50 g. grated cheese
  • 1 knob of butter

Preparation
  1. We chop the onion and the pepper and fry them in a frying pan with two tablespoons of olive oil over medium heat, until they are very tender. Approximately 15 minutes.
  2. Then add the desalted cod and cook it over medium/high heat for a couple of minutes, stirring continuously.
  3. Then let's pour the tomato, season with salt and pepper and let it cook over medium heat for five minutes, and then lower the heat.
  4. We take advantage of that time to cook the macaroni in plenty of salted water and spread the base of a baking dish with tomato sauce.
  5. Once the macaroni are cooked, we drain them and add to the source.
  6. Above we throw the sofrito, mixing it slightly.
  7. and about this spread in breadcrumbs, grated cheese and a few cubes of butter.
  8. To finish we take it to the oven and gratinate for 5-8 minutes.
  9. We serve the freshly made macaroni au gratin with cod and cheese.
