We will prepare a healthy and simple recipe for all people who suffer from celiac disease using pumpkin as the ideal food, constituting a nutritious meal with vitamins and minerals to add to the daily gluten-free diet.
Ingredients:
1 kilo of pumpkin
180 grams of cornstarch
120 grams of grated cheese
60 grams of butter
2 eggs
Salt, a pinch
nutmeg, to taste
Preparation:
First peel and cut the pumpkin into small pieces and place them in a pot with water. Once boiled, drain them well and make a puree. Let it cool for a few minutes and add the cornstarch, eggs, butter, a little grated cheese and season with salt and nutmeg to taste. Mix this preparation and make the gnocchi in the usual way.
Put them in a pot with boiling water and a little salt and when they rise to the surface, drain them carefully because they are very tender. You can serve them with natural tomato sauce, also with butter and grated cheese or with olive oil and grated cheese.
