Gluten-free pasta with chocolate
Today we prepare in Kitchen Recipes gluten-free tea pastries. We do this by substituting wheat flour for other products such as chickpea flour and almond flour. In this way we get some pasta that without ceasing to be classic pasta, more people can enjoy.

This type of pasta is perfect to present with our guests with coffee; but also to give away on specific dates. They are simple to make; no specific tool is needed for this. You can bathe them in chocolate and sprinkle ground coffee or cocoa on top, as I have done, or not.

Ingredients
  • 180 g. of butter
  • 100 g. icing sugar
  • 1 egg L
  • 1 tablespoon vanilla paste
  • 60 g. rice flour
  • 40 g. chickpea flour
  • 50 g. almond flour
  • 150 g gluten-free bread flour
  • ½ teaspoon xanthan gum
  • 2 tablespoons of whole milk

  1. The first thing we will do is remove all the ingredients from the refrigerator; must be to room temperature. Once they are ...
  2. We beat at low speed butter or margarine until smooth.
  3. We incorporate the egg and the vanilla paste and mix.
  4. Little by little we add the sifted flours along with xanthan gum.
  5. Finally, we add the milk and we mix everything again until gathering the dough into a ball.
  6. We stretch the dough with the roller between two baking papers, up to a thickness of 5-8 mm.
  7. We place the dough on the oven tray and we take to the fridge a minimum of two hours.
  8. After that time, we preheat the oven to 190ºC and with a pasta cutter we cut the cookies that we are depositing on the baking tray, lined with parchment paper. We will keep a certain distance between one and the other, so that when baking them they do not stick.
  9. Bake 10-12 minutes or until edges are light golden brown.
  10. We take out of the oven and Let it cold down couple of minutes. Then, with the help of a spatula or trowel, we place them on a rack to finish cooling.
  11. Once cold bathe in chocolate and sprinkle with coffee powder or cocoa.
