Gluten-free almond cookies
If you suffer from allergies or gluten intolerance and / or lactose, you can enjoy these cookies as I have. Three simple ingredients are used to shape these exquisite cookies: almonds, sugar and eggs. Simple, right?
They are very similar to the "Caprichos de Santiago", a sweet temptation that you should not miss trying in Santiago de Compostela. Its preparation is simple and the result is some almond cookies with air, very tasty to taste in small doses, if you can resist!
Ingredients
For 20 cookies
- 2 cups of almond flour
- 1 cup of brown sugar
- 1/2 cup of chopped almonds
- Egg whites 2
- 1 teaspoon vanilla extract
- 1 / 2 teaspoon salt
- 1/2 teaspoon cinnamon
Crafting
We mix all the ingredients in a bowl with a wooden fork or spoon.
We form balls with the dough and place them on a baking tray covered with waxed paper, flattening them slightly.
We bake 15-20 minutes at 180ºC, until lightly browned.
Let it cold down on the tray for 10 minutes and then transfer the cookies to a rack to finish cooling.
Notes
You can play to combine almonds with other nuts. I haven't tried it yet but I will.
