The most important thing about this salmorejo recipe are the ingredients, which are of good quality, such as tomatoes, which in summer time are when they are best, I use the tomato of pear that gives a lot of flavor and olive oil, a good oil gives a lot of flavor to this dish.

Ingredients

Preparation
  1. We wash the tomatoes, peel and remove the stems.
  2. In a blender we put the chopped tomatoes, the bread cut into pieces, the garlic, a little oil, salt and vinegar, very little, then we will rectify it, we beat everything, as we see we can add more bread or tomato until we leave it as we like it.
  3. Once everything is beaten, we pass it through a strainer to make it finer. We taste it with salt and vinegar, until we leave it as we like it the most.
  4. We will leave the salmorejo in the fridge cooling until it is time to serve it, it must be very cool.
  5. At the time of serving it, we will put it in individual casseroles, it is better and accompany it with a hard-boiled egg, cucumber and ham strips. I put it on a plate and each diner prepares it to their liking.
  6. You can put everything you like to accompany it, there are many vegetables that are very good.
