Gazpacho is a typical Andalusian dish, well known and healthyThis time I am going to prepare it without bread, it is how I do it, it can be done in both ways, but I like it better this way and at the same time I make it lighter.
You can also make some changes, since there are some ingredients that some people cannot eat like cucumbers, there are those who do not feel good, it can be done without. You will surely like how you do it.
- 1 kilo of tomatoes
- 1 green pepper
- 1 cucumber
- 2 garlic
- ½ onion
- A splash of olive oil
- Vinegar to taste
- Sal Island
- Water
- We will start by peeling the cucumber, onion and garlic. We chop the tomatoes. You can remove the skin and the seeds to your liking.
- We take a blender and add all the ingredients, add a little oil, vinegar, salt and water.
- We beat all the gazpacho with an electric mixer, until we have a crushed whole, we will add more water if necessary until it is like a smoothie or the desired texture.
- We taste salt and vinegar and rectify.
- We will put the gazpacho in the fridge until serving time, if you like it very cold you can add some ice cubes.
- And it will be ready to serve, if you want to prepare it differently when we go to serve, we will put it in individual bowls accompanied by pieces of croutons, cucumber, tomato or diced pepper.
