In the kitchen there is not always a complication. There are recipes with a small and simple ingredient list that provide us with a delicious combination of flavors. So it is with the cauliflower al ajoarriero that today we invite you to try. A classic of our gastronomy that triumphs for its simplicity.
The recipe has four key ingredients: cauliflower, garlic, paprika and extra virgin olive oil. I have been lucky enough to be able to cook with organic products, freshly picked, and I have opted for the Paprika de la Vera, to give the recipe color and flavor. Do you dare to prepare it?
- ½ large cauliflower
- 6 cloves of garlic
- 1 slice of old bread
- 2 teaspoons of paprika
- A sprig of parsley
- Olive oil
- Vinegar
- Sal Island
- Let's cook the cauliflower in a saucepan with a glass of water and salt. In this way and with the lid on, it will finish steaming.
- Once cooked we chop it and we reserve it.
- In a little oil we put fry the bread until golden. Then, we remove and in the same oil we brown 4 whole cloves of garlic without skin.
- In a mortar we put the fried bread, the parsley, the garlic cloves, a pinch of salt and a splash of vinegar. We mash the ingredients and add a little water to cook the cauliflower) to the mixture.
- In the same pan we sauté the cauliflower, incorporating the paprika and the mortar mix. Cook for a few minutes and serve.
