To make this task easier, today I bring you this recipe for stewed chickpeas with chicken and vegetables. A delicious and very healthy dish, ideal to introduce legumes back into the weekly menu. Legumes are a fundamental pillar in the diet of the whole family, but especially for children. In addition, it is very easy to prepare and it keeps perfect from one day to the next, so you can cook it the day before. Let's do it!

Ingredients
  • 500g buttery chickpeas
  • A leek
  • Two onions
  • A carrot
  • A red pepper
  • A green pepper
  • Two free-range chicken drumsticks
  • Extra virgin olive oil
  • Sal Island

Preparation
  1. First we are going to cook the chickpeas in the fast pot, put water over high heat.
  2. When the water is hot, add the chickpeas and leave a few minutes until it begins to foam.
  3. With the help of a ladle we remove the foam that may appear.
  4. Now we add the whole peeled carrot, a whole peeled onion and the chicken thighs.
  5. We close the pot and put on high heat until the steam begins to come out.
  6. We lower the heat to medium temperature and cook for 25 minutes.
  7. Once the speed cooker has expelled all the steam and can be safely opened, we separate the ingredients.
  8. We separate the chicken and the chickpeas and reserve, the broth can be frozen for other dishes.
  9. We discard the rest of the vegetables.
  10. Now we are going to prepare the sauce, wash and finely chop the red pepper, the green pepper and the remaining onion.
  11. Sauté the vegetables in a frying pan with a drizzle of olive oil, add salt and cook for about 8 or 10 minutes.
  12. Add the chickpeas and stir well.
  13. To finish, we bone the chicken and chop well, add to the pan and heat for a few minutes.

Notes
Don't forget to soak the chickpeas the night before.

    Thank you very much for your comment Montse, regarding your question, the cooking broth has little flavor to use it to make a soup, what you can do is use it to make a rice with vegetables and mushrooms.
