But if you prefer, you can fry them in a pan with plenty of oil and they will be very rich. You can even change the oatmeal and coat the eggplant bites with unsweetened cereal flakes. Ingredients
  • 1 large eggplant
  • 200 gr of ricotta cheese (cottage cheese)
  • ½ onion
  • 2 cloves of garlic
  • 1 egg
  • bread crumbs
  • 1 teaspoon ground cumin
  • ½ teaspoon ground cinnamon
  • 1 tablespoon of honey
  • olive oil
  • shawl
  • 1 bowl of rolled oats

Preparation
  1. First we wash and dry the aubergine well, cut into small cubes.
  2. We clean the garlic and onion and chop it well.
  3. Now, we put a frying pan on the fire with a drizzle of olive oil.
  4. When the oil is hot, lower the heat and add the aubergine, garlic and onion.
  5. Add salt, cover the pan and cook for about 10 or 12 minutes, stirring from time to time.
  6. Once the aubergine is ready, let it cool for about 5 minutes.
  7. After that time, we put the vegetables in the blender glass and crush a little, without being too beaten.
  8. Next, add the ricotta cheese, honey and spices and beat again for a few seconds.
  9. We place all the dough in a deep plate, cover with plastic wrap and reserve in the refrigerator for at least 2 or 3 hours.
  10. Once the time has passed, we prepare a baking tray with a sheet of greaseproof paper.
  11. We preheat the oven to about 200º.
  12. We put the oat flakes in the blender glass and blend for a few seconds, just to break the flakes.
  13. To finish, we are taking small portions of dough with the help of two spoons.
  14. We go through the oatmeal flakes and with our hands, we form balls that we place on the oven tray.
  15. Finally, we bake for about 12 or 15 minutes and that's it.

Notes
The longer we have the dough at rest, the better it will handle and when cooking, the snacks will not open. If possible, leave the dough in the fridge from the day before.
