Eggless crêps

I rarely cook something sweet and I just don't know what happens to me with these types of recipes. Any salty recipe I can do it by eye without problems, instead the sweet recipes I follow them to the letter and I get real disasters ... These eggless crêps I love them because even the first time I did them they turned out well, quite an achievement for me! In addition, since they do not carry eggs, they seem lighter to me and whoever is allergic will be able to enjoy them anyway.

Degree of difficulty: Very easy

Preparation time: 20 minutes (+ dough resting time)

Ingredients for about 30 crêps approx (I use a pan of about 20 cm in diameter):

  • 250 gr. of flour
  • Half a liter of milk
  • 1 tablespoon sunflower oil
  • Sugar to taste
  • 1 sachet of vanilla sugar or a little bit of cinnamon powder (Optional)

Preparation:

Mix the flour with the milk, the tablespoon of oil, sugar and the envelope of vanilla sugar or the cinnamon, in case you have chosen to put it. It should be a smooth, homogeneous and slightly thick dough, which when dumped into another container does not splash. Cover it and let it rest for an hour and a half.

Once the dough has settled, stir it and begin to make the pancakes. For this you will need a pan, put it on the fire and when it is hot add a little batter (I use a ladle for this) and move the pan so that the crêp takes a round shape. If your pan is non-stick you will have no problem, but if it is not you should add a little butter before each crêp so that they do not stick. Once the crêp is done on one side, flip it over to make it on the other.

On one side they will be golden and smooth, on the other side it will be a little whiter and with little holes. Continue making the crêps and reserving them on a plate until you have finished all the dough.

Once they are all ready you can fill them with what you like the most like chocolate, Strawberry jam, peach... In my case this time I filled them in homemade plum jam.

You can present them at breakfast or snack time. If you want to give them a more special touch instead of making many small ones, you can only make a few very large ones. Fill them with chocolate and banana slices, accompanied by a good ball of vanilla ice cream y chocolate syrup Not suitable for diets!

Recipe suggestions:

Another option to present several large crêps can be to fill them with custard cream with bits of strawberry. Cut a strawberry into slices to place on the plate next to some born and end the presentation with Strawberry syrup. It is not suitable for diets either, but it is delicious!
