Preparation
- To make the romanescu cream we will start by cleaning it. Separate the bouquets from the romanescu, remove the thick part of the trunk, put the bouquets in a colander and wash them under the tap. We drain.
- We clean the leek, cut it into small pieces.
- Put a pot with a little oil, add the leek and let it cook and poach. You can put onion and leek or onion alone.
- When the leek is ready, add the potatoes, stir and add the romanescu sprigs. Cover with water or broth. Just covering everything.
- Add a little salt and pepper, let it cook until everything is well cooked.
- When it is cooked, we remove from the heat and with a blender we crush the cream very well.
- If you like the finest cream, once crushed we pass it through the Chinese.
- Put the saucepan back on the heat with the cream, add a splash of cream or milk cream to cook. Mix, let cook a few minutes.
- We taste salt, rectify if necessary and it will be ready to eat.
