Preparation
  1. To make the romanescu cream we will start by cleaning it. Separate the bouquets from the romanescu, remove the thick part of the trunk, put the bouquets in a colander and wash them under the tap. We drain.
  2. We clean the leek, cut it into small pieces.
  3. Put a pot with a little oil, add the leek and let it cook and poach. You can put onion and leek or onion alone.
  4. When the leek is ready, add the potatoes, stir and add the romanescu sprigs. Cover with water or broth. Just covering everything.
  5. Add a little salt and pepper, let it cook until everything is well cooked.
  6. When it is cooked, we remove from the heat and with a blender we crush the cream very well.
  7. If you like the finest cream, once crushed we pass it through the Chinese.
  8. Put the saucepan back on the heat with the cream, add a splash of cream or milk cream to cook. Mix, let cook a few minutes.
  9. We taste salt, rectify if necessary and it will be ready to eat.
  10. We can accompany the cream with pieces of toasted bread.
