Couscous, cabbage and carrot salad

Time should not be an excuse to eat healthy. Salads are a great ally when our time is short; just combine different raw fruits and / or vegetables to serve on the table one. A couscous salad with cabbage and carrots, is our proposal today.

We could have only used cabbage and carrot and incorporate, as we have done, some nuts to complete the salad. But we have decided to add one more ingredient: couscous. It cooks in 8 minutes and adds a warm touch to this salad that we did not want to miss.

Ingredients
  • Half a glass of couscous
  • 80 g. cabbage
  • 1 Carrot
  • 8 sultanas raisins
  • 8 chopped almonds
  • Extra virgin olive oil (or skimmed yogurt)
  • Salt and black pepper to taste.

Preparation
  1. We wash the vegetables and we cut the cabbage in julienne. We do the same with the carrot and mix the vegetables in a bowl or plate.
  2. We cook the couscous as recommended by the manufacturer. The usual thing is to pour half a glass of water (the same volume of couscous) into a saucepan and bring it to a boil, off the heat and for three minutes, cook the couscous.
  3. We incorporate couscous, raisins and almonds to the salad.
  4. We water with a little extra virgin oil or yogurt skimmed, salt and pepper to taste.
