Cold rice with vegetables for the summer

Today's dish is an excellent option to prepare at any time of the day that you have a few minutes and reserve in the refrigerator to taste cold as a fast food or a delicious light starter or garnish.


1 and 1/2 cups of cooked rice (common or brown)
1 red bell pepper, julienned
1 green bell pepper, julienned
2 leeks, thinly sliced
2 grated carrots
1 stick of celery, chopped
3 tablespoons minced pikles
1/2 cup green peas
Salt and ground pepper, to taste
olive oil, amount needed


Place all the ingredients detailed in the recipe in a container that you can take to the table and serve. Season with salt and pepper to taste and a drizzle of olive oil.

Once the preparation is done, take it to cool for a few moments in the refrigerator and serve it cold.
