Today we prepare some delicious oatmeal cinnamon raisin cookies. Some cookies that will be very easy to work with and that you still have time to have ready to accompany your coffee in the middle of the afternoon, don't you think it is a good plan? With two dozen you will have enough for the whole family to indulge in a sweet treat this weekend.
The ingredient list is extensive, but don't be fooled by it. Most of the ingredients will already be in your pantry. These cookies can be gluten free As long as you make sure that the oats are certified as such. This will ensure that even more people can enjoy them.
- 2 cups rolled oats or oatmeal
- 1 teaspoon of chemical yeast
- 1 teaspoon of cinnamon
- ⅓ teaspoon of salt
- ¾ cup butter, at room temperature
- ½ cup of white sugar
- ½ cup of brown sugar
- 1 egg
- 1 teaspoon of vanilla
- 1 cup raisins
- We preheat the oven at 190ºC and line the baking tray with greaseproof paper.
- To make the oatmeal, we place the flakes in a food processor and blend until we get a floury texture.
- We mix the flour with the cinnamon, the chemical yeast in a bowl and reserve.
- In another bowl we beat at high speed butter and sugars.
- We add the egg, vanilla and salt and beat again ..
- Then we incorporate the flour mixture little by little, mixing well after each addition until integrated.
- To finish preparing the dough, we add the raisins.
- We catch portions of dough with a spoon and drop them on the baking tray, leaving distance between one and the other. You can do them in two batches.
- We bake at 190ºC 12 minutes or until edges start to brown.
- Remove from the oven, let them warm for a few minutes and then let the cookies cool on a rack.
