This recipe is very healthy and can be a 10 in terms of children's dinner or lunch. By eating it with their hands, children can handle it much better, discovering new textures and flavors, expanding their range of healthy foods.

Ingredients

For the filling:

  • 2 chicken breasts.
  • 1 onion.
  • Salt
  • Olive oil.
  • Parsley.

For the mass:

  • 225 g of flour.
  • 50 g of olive oil.
  • 125 g of water.
  • 1 teaspoon of chemical yeast.
  • Pinch of salt.
  • Beaten egg (to paint and seal the edges).

For the bechamel:

  • 3-4 tablespoons of olive oil.
  • 2-3 tablespoons of flour.
  • Cured cheese.
  • Milk.
  • Salt
  • Pinch of nutmeg

Preparation

First, we will do the dough of our empanada. To do this, we will put the flour with the yeast in a bowl and add the oil and water through a small volcano that we will create with our own hands. We will knead well until we get a homogeneous, elastic and moist dough.

Then we will do the filling. To do this, we will chop the onion very finely and cut the chicken breasts into medium dice. We will fry everything in a frying pan with a good base of olive oil.

Meanwhile, we are doing the cured cheese bechamel. We will put a saucepan on the fire, we will add a good base of olive oil and, when it is hot, we will add the flour. We will stir so that it loses the raw flavor and we will gradually incorporate the milk. We will add the salt and the nutmeg to taste and the small cubes of cheese, until they melt and leave a light béchamel.

Then, we will mount the empanada. We will stretch out two plates of the dough, one on a baking sheet, we will put the filling on top and cover with the cheese bechamel. We will close with the other sheet of dough and seal the edges with beaten egg.

Finally, we will close the edges of the pie and paint the entire surface with beaten egg. We will bake during 25-30 minutes.
