Ingredients
  • 1 kg of peas
  • 4 eggs
  • 150 grams of ham in cubes
  • 5 cloves of garlic
  • ½ onion
  • 1 green pepper
  • Piece of bread
  • Black pepper
  • Paprika
  • Olive oil
  • Sal Island
  • Liter and a half of water

Preparation
  1. In a medium saucepan, pour a splash of olive oil into it and when it is hot, add the piece of bread. We let it fry a little and we put it aside in a bowl to mash it together with two cloves of garlic (we put it aside until later).
  2. In the same pot and with the same oil, we fry three pieces of garlic, the half onion in thin slices, the green pepper cut into two or three pieces and the ham blocks. When everything is more or less stir fried, we throw the green peas, a teaspoon of sweet paprika, a touch of black pepper (to taste) and a pinch of salt. We also add the bread and the rest of the crushed garlic that we had set aside and stir everything. When everything has mixed well and flavors come together, pour the water.
  3. We let cook for half an hour over medium heat.
  4. When there are 5 minutes to turn off the fire, we add the 4 eggs to the pot and we let them get poached.
  5. Prepared ready to enjoy eating rich and well.

    I've been following the lasrecetascocina account on Twitter for a short time but I love it. In addition, I am especially delighted with Carmen Guillen's recipes, and when I click on a recipe and see that it is hers, I know it will turn out well for me.
    This recipe for peas, in Huelva we call it peas, so I suppose she is from the area, I make it with a variant; Instead of the fried bread, I add a few pieces of potato. Some are very chopped, and the rest are broken, so that the sauce will thicken. It is scandal.
