Cherry cakeTaking advantage of the cherry season, I like to prepare desserts with them. The cakes are a delight and if we accompany them with fruits they are much better, healthier and juicier.

Cherries are very popular especially with childrenThey are like pipes, you start eating and you don't stop until they are gone. That is why you have to take advantage of and prepare desserts with them since they give a lot of flavor, they are also used to make sauces for savory dishes, they are great to accompany some meats.

Ingredients
  • 200 gr. cherries
  • 250 flour
  • 250 sugar
  • 250 cream or heavy cream
  • Lemon zest
  • 3 eggs
  • 1 sachet of backing powder
  • Icing sugar to decorate

Preparation
  1. To prepare the cherry cake we will start by lighting the oven at 170ºC. Heat up and down.
  2. We wash the cherries, the bones are removed if you have a device for it, otherwise we will make a cut with a knife and remove the bone. We reserve them.
  3. In a bowl we put the eggs with the sugar, we assemble until they double in volume.
  4. We add the zest of a lemon.
  5. We whip the cream until it takes a little consistency. We will add it to the previous mixture little by little.
  6. In a bowl we put the flour and the yeast, we sift it.
  7. We will add the flour to the previous mixture little by little, until it is well integrated.
  8. We add the cherries to the dough, we leave a few to put on top.
  9. We spread a mold with a little butter. We incorporate the dough into the mold and put a few cherries on top of the dough.
  10. We put the mold in the oven and let it cook for about 30 minutes, more or less, depending on the oven. When we see that it is ready we click in the center with a toothpick and if it comes out dry it will be ready.
  11. When the cake is ready, we take it out and let it cool.
  12. Sprinkle with icing sugar and serve.
