Soufflés can be made in any container or mold, but traditionally it is made in a round mold with high and straight walls.

Preparation time: 15 minutes + 30m cooking time
Ingredients for 4 people:
- 4 eggs
- 400 ml of milk
- 40g of butter + 15 g for greasing
- 110 g of Gruyère cheese, grated
- 40g flour
- 1 teaspoon of nutmeg
- salt.
Preparation:
- The first thing we will do is heat the oven to 210 ºC. Next we will grease the mold with butter
- We will place a saucepan on the fire and we will melt the butterWhen it is melted, we will include the flour at once and stir for 2 minutes. We will remove the heat, add the milk, and cook it over low heat until it becomes thick. Outside of the fire, we will add the nutmeg, the egg yolks and the cheese, and let it cool.
- As it cools, we will mount the clear ones to the point of snow and we will add them gently to the previous preparation
- We will pour into the mold and bake for 30 minutes.
- Now we just have to wait and it will be ready to eat
