Cauliflower brandade with pesto

Ingredients
- ½ cauliflower
- 1 turnip
- 8 garlic sprouts
- 4 cloves of garlic
- water
- extra virgin olive oil
- shawl
- chive
- basil
Preparation
- We heat plenty of water in a saucepan with salt.
- We separate the florets from the cauliflower.
- Peel and chop the turnip.
- We put everything in the casserole to cook for approximately 10 minutes.
- Laminate the garlic and put them to sleep in two pans with a good jet of olive oil. We remove and reserve them.
- We transfer the cauliflower and the cooked turnip to a glass of tourmix.
- Season and add some golden garlic.
- Blend with the electric mixer and water little by little with the cold garlic oil while we beat to bind it.
- We place the fresh garlic on slices of bread on a tray to put them in the steam oven for 3 minutes.
- We take them out and paint them with pesto sauce.
- With the help of a spoon, we place a "ball" of our cauliflower brandade on the slices.
- We paint again with pesto sauce on top.
For the pesto sauce
- We peel a garlic and we pass it through an electric mincer.
- Add the basil leaves, pine nuts and salt.
- We chop until we have a paste.
- Mix everything with a jet of olive oil in a blender until a smooth and fine mixture is formed.
- We add 4 tablespoons of warm water to liquefy a little.
