- 500 g. broccoli
- 100 g. fresh spinach
- 2 garlic cloves, minced
- 1 chopped onion
- 2 tablespoons of extra virgin olive oil
- 800 ml. vegetable broth, hot
- Black pepper to taste
Preparation
- We prepare the «broccoli rice», grating or shredding the broccoli into chunks. We take advantage of both the florets and the stems. We booked.
- In a saucepan we heat the olive oil and poach the onion and garlic over medium heat for 5 minutes, stirring frequently.
- Then add the broccoli rice and sauté 5 more minutes, stirring frequently.
