Loin stuffed with chorizo ​​and black garlic

El organic black garlic It has been a discovery (for the better) in our home. Every time we use it in more recipes (many shared here with you) because it gives a rather peculiar and rich flavor to our meals. On this occasion, we bring you a tenderloin stuffed with chorizo ​​and black garlic. We have done it in the oven and in the photograph it is seen as it came out of it and cut into slices. Then you can add the sauce you want: mushrooms, almonds, wine, etc. We leave the sauce to your wise choice.

Ingredients
  • Pork loin (1 piece)
  • 5 cloves of black garlic
  • 2 medium sausages
  • Black pepper
  • Sal Island
  • Olive oil

Preparation
  1. This recipe is very simple and you only need an oven to carry it out. We will clean the piece of loin well and make a slit right in the middle to be able to fill it good.
  2. Once open, we will be pouring our slices of chorizo ​​and black garlic well placed (thinking that later that tenderloin will also be sliced). Once filled, we will tie with a thin rope so that when you put it in the oven it does not fall apart.
  3. Before putting it in the oven, we will pour a little olive oil over it and we will salt and pepper: salt and ground black pepper.
  4. We put it in the oven, in medium height, for approximately 30 minutes at about 190 ºC. If we see that it is before, we set aside before.
  5. Once done, we let it cool down, and when it is warm, we cut into slices and serve.
  6. It can be eaten alone, since being filled with chorizo ​​and black garlic has a lot of flavor, or it can also be served with a mild flavor sauce.
