Ingredients

For 5 people:

  • 5 medium or large aubergines.
  • 1 whole chicken breast.
  • 2 cans of mushrooms.
  • 2 strips of smoked bacon.
  • 2 bricks of cooking cream (200 ml)
  • Half an onion.
  • Olive oil.
  • Salt
  • Thyme.
  • Ground black pepper
  • Wedge of semi-cured cheese.

Preparation

To make these delicious recipe for chicken stuffed aubergines in mushroom sauce, the first thing we have to do is prepare are the aubergines. To do this, we will cut them in half so that there are two equal elongated parts. To these, we will make some cuts to the meat of the eggplant so that later it is easier to remove it.

We will place them on a baking sheet, season it and pour a drizzle of oil on top of each eggplant, and put them in the oven for 15 min at 180 ºC. Once the time has passed, we will empty them and reserve it for later.

Later, we will do the eggplant stuffing. To do this, we will place two pans, in one we will place half of the chopped onion with the mushrooms and sauté them, and in the other we will sauté the onion together with the chicken, bacon and the meat of the aubergines that we had reserved before.

When we see that the mushrooms are soft and the onion poached, we will beat all good and we will add it to the other pan where the chicken is being made. Sauté everything for about 5 minutes and add the cream, letting it cook for about 10 minutes so that the cream reduces.
