Organizing the weekly menu for the whole family can be a tedious and complicated task, especially when it comes to thinking about dinner. The last meal of the day should be light but without forgetting the necessary nutrients, especially when it is the food that the children are going to eat. With the return of school and normality, there is hardly time to think about original recipes, much less time to cook them.

For this reason, whenever possible it is important to spend time cooking certain dishes that allow us to freeze the amount that is not going to be consumed during the day. In this way you will always have reservations for the nights that you have less time or that you do not feel like making out in the kitchen. Today I bring you these fake vegetable croquettes, and I say false because they do not have a béchamel base, I have prepared them in the simplest way.

But you can add as many vegetables as you want, if your children have problems eating vegetables this recipe is perfect for you. To complete the dough you can add very tender peas previously boiled, cooked sweet corn or broccoli pieces. Children will love it and will eat the vegetables more easily. Let's get to work!

Ingredients
  • 2 large potatoes
  • 2 large carrots or 3 if they are small
  • the yolk of an egg
  • shawl
  • Bread crumbs
  • 1 egg for breading
  • 2 tablespoons of milk

Preparation
  1. First we have to cook the vegetables, we put a large pot with water and salt and we put it on the fire.
  2. Peel and wash the potatoes and carrots well, cut in half and add to the casserole.
  3. The vegetables will take approximately 25 minutes to be tender, to know if they are, just prick with a knife, if the vegetables come off easily, they are perfect.
  4. We drain the vegetables and reserve separately.
  5. In a bowl, we put the potatoes and mash them with a fork, without beating too much so that they do not release water. We let them warm up.
  6. Meanwhile, we are cutting the carrots into small pieces and we reserve a few minutes until they warm up a bit.
  7. Now, we add the carrots to the mashed potato, add salt to taste and add the egg yolk. We stir well and reserve.
  8. We prepare the ingredients to bread the croquettes, in a container we put the egg and the white of the egg that we had left from the dough and add two tablespoons of milk.
  9. In another container, we put breadcrumbs.
  10. With the help of a soup spoon we are taking portions of dough, we shape it with our hands and we first pass through the egg and then through the breadcrumbs.
  11. We prepare a baking dish with a parchment paper and preheat the oven to 200º.
  12. Finally, we put the croquettes that we are going to serve on the tray and freeze the rest.
  13. We put the tray in the oven and voila, in about 20 minutes these delicious vegetable croquettes will be ready.

Notes
When the croquettes are baked they will not be very golden, if you prefer you can use whole grain breadcrumbs and this way you will get that the breading acquires a more golden tone.
