Baked lentil milanesas are a healthy food due to their fiber and iron properties, but combining them with brown rice will give us a higher proportion of proteins and vitamins for a healthy and balanced diet.
Ingredients:
11/2 cup brown rice (cooked)
3 cups lentils (cooked)
2 chopped onions
2 eggs
minced garlic and parsley, to taste
oregano, a pinch
breadcrumbs, amount needed
Salt and ground pepper, to taste
Preparation:
Cook the lentils until tender, remove the water and process. Boil the brown rice and once cooked, strain it and process it.
Then in a bowl mix the lentils and rice and add the chopped onion and season with salt, pepper, garlic and parsley and a pinch of oregano and add the beaten eggs. Form the milanesas with both hands and roll them over the breadcrumbs. Arrange them on a tray previously greased with oil and cook them in the oven until golden brown, remove them and serve them with a portion of fresh vegetable salad.
