Ingredients
  • 500 grams of pork loin uncut
  • 8 large slices of cooked ham
  • 8 slices of cheese
  • 2 eggs
  • bread crumbs
  • shawl
  • Olive oil for frying

Preparation
  1. Cut the pork tenderloin into 8 portions, about 4 centimeters each.
  2. We separate each portion in the center, being careful not to cut it completely.
  3. We remove all the fat possible, wash and dry well with absorbent paper.
  4. We spread on the clean and dry countertop, and we salt each portion of pork.
  5. Now, we place a slice of cooked ham on one of the halves of each portion.
  6. We also add a slice of cheese, and close each booklet.
  7. So that they do not separate when frying them, you can place a pair of toothpicks at each end.
  8. We prepare a frying pan with plenty of oil and we heat it up.
  9. Meanwhile, we are breading each little pork book.
  10. We prepare the eggs in a bowl and beat them well.
  11. In another container, we prepare the breadcrumbs.
  12. First we go through the beaten egg, and then through the breadcrumbs.
  13. We fry each book well until it is golden brown, taking care not to burn it.
  14. We drain the excess oil on the absorbent paper, and that's it.
