With a simple chicken breast, you can create a dish as delicious as this Pedro Ximenez chicken breast. A simple recipe, quick to prepare and for which you only need four ingredients. The special touch is provided by the sweet and special flavor of Pedro Ximenez, a sweet wine that, in addition to being a great companion for aperitifs, adds a unique touch to any type of meat.
As a side, you can serve a white rice as I have made. The recipe I have used is the traditional one, you just have to brown a couple of garlic cloves in a drizzle of oil and cook the rice in the time set by the manufacturer. As well can you serve a green salad, to add a touch of vegetables and thus complete this already complete dish.
- 2 free-range chicken breasts
- 200 ml of liquid cream
- pepper in grain
- extra virgin olive oil
- shawl
- ground pepper
- half a glass of Pedro Ximenez sweet wine
- First we are going to prepare the chicken breasts, clean the fat from the meat well, wash with cold water and dry with absorbent paper.
- Now, we chop the breast into sticks about two fingers thick, season and reserve.
- We put a frying pan on the fire with a drizzle of virgin olive oil.
- Next, we cook the chicken sticks in the oil until they are completely done and golden brown.
- We remove the chicken from the heat and reserve it on a plate.
- Now, in the same pan that we have used to cook the chicken, we put about 15 or 20 peppercorns and we give a heat stroke.
- Then we add the Pedro Ximenez sweet wine and let the alcohol evaporate for about 3 minutes over medium heat.
- To finish, add the liquid cream and cook for about 3 or 4 more minutes over low heat.
- Add the breast to the pan so that it is well impregnated with the sauce and serve hot.
