Grilled peach and walnut salad

Come summer I love experimenting with salads. They are very versatile, allowing us to integrate an endless number of ingredients: fruits, vegetables and even legumes. Today the protagonist is grilled peach, at the last moment before serving the salad.

The key to this salad is that the peach is tender and provides a warm touch to it, hence it must be cooked at the last minute. But don't worry, it won't take you more than 5 minutes. To accompany the peach I have opted for walnuts, which could be substituted for pistachios or cashews, among others. nuts. Give it a try!

Ingredients

For two people

  • Lettuce
  • 10 walnuts
  • 1 large or 2 small peaches
  • Some cured cheese vitutas
  • Extra virgin olive oil
  • Balsamic vinegar
  • Sal Island
  • Pepper

Crafting

We clean well lettuce leaves under running cold water. We cut them - I did it with scissors into strips - and we placed them forming a bed in a source.

We open the nuts and we distribute them on top of the lettuce.

Next, we peel the peaches and cut them into wedges. On a griddle or skillet very hot and without oil, we cook them for a few minutes until the surfaces "stick" slightly and brown. The peaches will be very tender, but without falling apart. We place them on the lettuce.

We distribute some cheese shavings cured on top and finally, we water with the vinaigrette.
