This preparation is one of my favorites, it can be eaten alone or with a delicious grilled turkey, chicken or fish. Keep this dish in mind as a rich starter, as it can be served hot or cold.
Ingredients
1 kilo of carrots
1 large onion, minced
2 tablespoons oregano
3 egg whites
Olive oil

Preparation
Cut the carrots into slices neither too thick nor too thin and boil them until they are tender. Apart, put in a pan with olive oil, when it is very hot, put the onion to sauté, when it is almost transparent add salt, the carrots well drained and the oregano, sauté for 3 minutes, stirring from time to time and remove from the fire.
Pour the preparation into a container, add the whites previously beaten, with a little salt and mix, place everything in a suitable ovenproof dish and cook it over moderate heat until golden brown on top.
