Cream pie

Cream cake, a delicious cream cake with the top part of toasted sugar, very similar to Catalan cream, only with a short crust base that gives it a very good and different touch. It can also be served with cream, cinnamon ... instead of sugar or nuts, they can be placed on top of the cake.

Ingredients
  • 1 sheet of shortcrust pastry
  • 300 ml. liquid cream
  • 200ml. milk
  • Yolks 4
  • 25 gr. corn flour (Maizena)
  • 25 gr. wheat flour
  • 1 cinnamon stick
  • 1 piece of lemon peel
  • 80 gr. sugar + a little to put on top
  • 1 spoonful of butter

Preparation
  1. To make the cream cake, the first thing to do is set the oven to 180ºC. We will take a removable mold better than 24 cm. and we will put the broken dough. We will cut the excess edges.
  2. We prick the dough with a fork, put a sheet of baking paper on top, or the one with the dough on top and we cover it with a legume such as chickpeas or beans, which is what I had.
  3. We put it in the oven until it is golden brown for about 15-20 minutes, remove and let it cool.
  4. Now we prepare the cream. We put the milk to heat over low heat, with the cinnamon stick and the lemon rind. We will stir and let the milk take on the flavors.
  5. On the other hand, in a bowl we put the yolks with the sugar, mix, add the cream, mix well and then put the two flours. We mix well so that there are no lumps.
  6. We will add this mixture little by little to the milk and without stopping to stir, until it begins to thicken.
  7. When it is already thickening, remove from the heat, add the tablespoon of butter and mix.
  8. Let it warm, cover the cream with plastic wrap so that a crust does not form on top and put it in the fridge.
  9. When the dough and the cream are cold as well, we will assemble the cake. We will pour the cream covering the entire cake.
  10. We cover the entire base of the cake with sugar and with a kitchen torch we will toast the sugar. If you do not have to put the cake with the grill of the oven already very hot. Let cool.
