In my family, more specifically, in my partner's family they are very much about making their own products to freeze, as is the case with these rich homemade San Jacobos (They also make their own flamenquines from Córdoba, delicious too). They have nothing to do with those bought already made, the taste is much better, they are not so cloying when it comes to eating them and of course, they are much healthier.

- 12 tenderloin steaks
- Sliced cheese or cheese to melt
- 6 slices of ham
- 2 eggs
- Bread crumbs
- Wheat
- Olive oil
- To make our own Homemade San Jacobos We will need to put a little wheat flour on a plate, on a different breadcrumb, and on a third plate, two beaten eggs.
- We will take for each Saint James: 2 sirloin steaks, a sliced cheese and 1 slice of ham. We will do the following, we will put the loin fillets and in the middle we will place a slice of cheese and another of ham. We will make a kind of sandwich with it, which we will previously go through the flour, then for the egg mix shake and finally by the bread crumbs. We will do the same process with the 6 san jacobos that will come out.
- Once this is done, we can freeze to do it when we want or do it at the moment. If we do it at the moment, we will have to put it in very hot olive oil, so that they are crunchy on the outside and juicy on the inside.
