There are many ways to incorporate vegetables to our diet. One of my favorites is to sauté them with a little oil along with other fruits, vegetables or nuts. In order to take advantage of some of those ingredients, this broccoli, dried fruit and bacon stir fry came up that I will surely repeat.
Some sticks of almond and some pistachios they make the perfect complement to the broccoli flowers in this recipe. To sauté them, the bacon fat was enough, an extra that you will have to give up if you are on a diet. Also, to give it a fresh touch, add cherry tomatoes at the last minute. Do you dare to try it?
- ⅓ broccoli
- 12 pistachios
- 2 tablespoons of chopped almonds
- 70 g. strips of bacon
- 10 cherry tomatoes
- Olive oil
- Sal Island
- We cut the broccoli in pieces (flowers) after removing the stem.
- We heat water with a pinch of salt in a saucepan. Let's cook the broccoli for 8-10 minutes. We take out and let drain in a colander.
- In a frying pan, with a teaspoon of oil, we sauté the bacon next to the nuts, making sure that the latter do not burn.
- When the bacon is almost done, add the broccoli and we skip two more minutes.
- In conclusion, add the cherry tomatoes in half and mix.
- We serve immediately.
