Scrambled eggs with spinach

I know, spinach They are not usually to our liking and much less when it comes to children, however, their high content of iron and folic acid makes them essential in our diet. Today I propose a simple recipe and that perhaps it will help us to consume them with more pleasure.

Preparation time: 20 minutes (5 if you have frozen spinach)

Ingredients for 1-2 people:

  • Half kilo of spinach
  • 3 teeth of Garlic it
  • 1-2 eggs
  • Olive oil

Preparation:

In my case the spinach was fresh, if it is also your case you will have to boil them first, once ready we drain them. If you use them frozen you can skip this step.

In a frying pan we add a little olive oil and, when it is hot, lightly brown the sliced ​​garlic cloves. Once ready we add the spinach, we give them a few turns and, finally, we add the eggs beaten with salt and pepper. We mix until it is set to our liking.

It can be a good accompaniment to some steaks of chicken Or any fish, although in my case it was a single dish, light and healthy dinner.

Recipe suggestions:

  • If you want to camouflage the flavor of the spinach a bit more, try adding a little paprika (o hot spicy, if it is to your liking).
  • I was a bit rough and did not cut the stems off the spinach (big mistake on my part). If you use them fresh, do not do the same as me: Remember to cut the stems.
