Ingredients
  • 1 bunch of fresh wild asparagus
  • 3 eggs
  • Serrano ham tacos
  • Garlic
  • Extra virgin olive oil
  • Sal Island

Preparation
  1. We prepare a container with cold water. We cut the asparagus by hand and let them soak for 1 hour to lose acidity.
  2. We put a frying pan on the fire with a drizzle of virgin olive oil, fry the garlic over medium heat, without letting it brown too much.
  3. Drain the asparagus well and add to the pan.
  4. Sauté well until tender. We add salt to taste.
  5. Next, beat the eggs with a pinch of salt in a separate container, add to the pan while stirring.
  6. Finally, we add the ham cubes to taste. Let them cook for a minute and remove from the heat.

Notes
The asparagus must be cut by hand, we chop until we reach the end of the stem, when it cannot be chopped any more, that is the part that we must discard.
