Besides incorporates tofu, a vegan protein that I have marinated to give it flavor, and rice noodles, a quick and interesting option to make soups and accompany stir-fried vegetables.

If you organize well you can have this dish ready in 20 minutes which is approximately how long it takes for the tofu to pick up all the flavors and cook. Don't have that much time? Fry the seasoned tofu and you will save 10 minutes. The stir-fry has soy sauce, so it will not lack flavor.

Ingredients
  • 1 block of tofu
  • 200 ml of water
  • 1 teaspoon of paprika
  • 1 teaspoon oregano
  • 1 teaspoon garlic powder
  • A pinch of cumin
  • A pinch of freshly ground black pepper
  • A pike of salt
  • 70 g. rice noodle
  • 1 cebolla
  • 2 Italian green peppers
  • 1 red pepper
  • 2 garlic clove
  • 2 cayenne chillies (optional)
  • Olive oil
  • A splash of soy sauce.

Preparation
  1. Cut the tofu into cubes and we put it in a pan where it fits extended.
  2. We add the water, paprika, oregano, garlic powder, cumin, salt and black pepper and heat the pan.
  3. We bring to a boil and then lower the heat so that it is maintained. We put a lid on the pan and cook for 5 minutes. Then we uncover and continue cooking until the water has evaporated.
  4. So, we pour a little bit of oil and fry the tofu until golden, moment in which we remove the pan from the heat.
  5. While the tofu is cooking, cut the onion into julienne strips and the peppers into strips. we sauté to live fire together with the garlic cloves and the chillies in a large skillet with a good splash of oil.
  6. At the same time we also cook the noodles following the manufacturer's instructions. In my case, it was enough to cook them in boiling water for 4 minutes, after which they are cooled and drained.
  7. With all the ingredients ready, we just have to add tofu and noodles to the pan with the vegetables, add the soy sauce and sauté for a couple of minutes.
  8. We serve the vegetables with tofu and rice noodles, hot.
