Ingredients
  • 300 gr of desalted cod
  • 300 gr chickpeas
  • ½ onion
  • 150 gr spinach
  • 2 cloves of garlic
  • a bay leaf
  • a pinch of cumin powder
  • paprika
  • 2 slices of bread
  • 2 boiled eggs
  • olive oil
  • a pinch of salt

Preparation
  1. To start we need to desalt the cod, for this we submerge it in cold water and keep it in the fridge for 48 hours. During this time we will change the water 3 times a day.
  2. At night put the chickpeas to soak.
  3. After so much preparation let's start with our stew! In a pressure cooker, put the chickpeas, the bay leaf, the finely chopped onion and the pinch of salt. Also add a piece of cod or skin to add more flavor. Cover with water and cook for about 20 minutes.
  4. Cook the eggs in a small saucepan.
  5. Meanwhile prepare the mash that will give so much flavor to our cod stew. To do this, add a good jet of olive oil to a frying pan and fry the garlic, when they are ready to remove them and fry the slices of bread together with a teaspoon of paprika from the vera. Put the fixed garlic, the fried bread and part of the paprika oil in a mortar. Mash well with the mortar and add a pinch of ground cumin.
  6. In our pressure cooker we already have the cooked chickpeas, so remove the cod skin and discard it. Add the spinach, the chopped cod and the mash to the pot. Cook everything for 5 minutes over low heat, until the cod is cooked.
  7. When it is cooked, if the cod has bones, it is time to remove them, if not, then open it in slices.
  8. To serve, put a couple of tablespoons of stew on the plate, followed by the cod and the chopped boiled egg. And to eat!
